Time for frozen treats!  I’ve been waiting for the perfect opportunity to talk about popsicles, and there isn’t a better one than today, when it is sunny, blazing hot, and just screams summer. It’s my first summer in Colorado and I’ve gotten a taste of what mountain weather is like. Basically, scorching hot one minute, passing rain or thunderstorm the next, with some hailstorm in between. 

We’ve been having consistently warm days lately and there’s nothing more that I crave throughout this pregnancy than frozen sweet treats.

Have you tried these Chocolate Dipped Fudge Popsicles? They’re way better than the storebought ones and don’t usually last long in our freezer.

As much as I want to indulge in rich ice cream and frozen desserts, I eat healthy probably 80% of the time and so wanted to make a frozen treat that is light yet satisfying. I have been making these berry yogurt popsicles – they’re so tasty, creamy, and super easy to make with just 3 ingredients! I think the hardest part is waiting for them to freeze up.

I also love that they’re made with all natural ingredients, not overly sweetened, and not tinted with food coloring. Since it is loaded with yogurt and fresh fruits, it can actually pass as a healthy snack that you can feel good about eating. Plus, these berry yogurt popsicles are great snacks for kids too!

These healthy 3-Ingredient Berry Yogurt Popsicles are easy to make frozen treats that will keep you cool all summer long! 

For these popsicles you will need:

  • Banana – Ripe bananas (not brown) adds creaminess and provides sweetness for the popsicles.
  • Berries – You can use whatever berries that are ripe and in season. Strawberries, blueberries, raspberries, blackberries are abundant right now. I happened to have a mix of blueberries and raspberries on hand so that’s what I used. Frozen berries also work well in these popsicles too! You can just toss it into the blender or food processor without having to thaw them beforehand.
  • Yogurt – I use plain Fage 0% Greek yogurt for a lighter yet high protein treat, but feel free to substitute with low-fat or full-fat yogurt, or even vanilla yogurt if you prefer.

Do I need to add sweetener?

Sweetener is totally optional. I find that the popsicle mixture is plenty sweet (from the ripe banana and berries) without any added sweetener. However, if your fruits are on the under ripen side, you can add a spoonful or two of honey, maple syrup, or sweetener of your choice.

What special equipment do I need to make these popsicles?

I used popsicle mold and popsicle sticks. I don’t remember where I got mine but here’s a similar one that is dishwasher safe and BPA-free. If you don’t have popsicle mold, you can just use 3 oz size paper cups.

To remove the popsicles, simply run the mold under warm water and the frozen popsicles will slide right out. I usually make a big batch, then remove and store them in a large freezer bag so it’s easier to grab and go for whenever I need something cold and sweet.

Ingredients

  • 1 1/2 cups fresh or frozen berries
  • 1 large ripe banana peeled and sliced
  • 1 cup plain Greek yogurt
  • 6 popsicle molds and popsicle sticks

Instructions

  • Place berries, banana, and yogurt in a blender or food processor, and blend until smooth (or coarsely blended if you prefer pieces of fruits).
  • Pour mixture into popsicle mold and set popsicle sticks in the middle of the molds.
  • Freeze for six hours or until solid.
