Chocolate Dipped Fudge Popsicles

Creamy, frozen chocolate dipped fudge popsicles are super easy to make with just a handful of ingredients.

Food on a stick is just more fun. Corn dogs, kebabs, cake pops… pretty much anything served on a stick is automatically a win in my book. Now that the holidays are over and it’s back to school time, I’m sharing a fun, delicious after-school snack – Chocolate Dipped Fudge Popsicles – that I’m sure all kids will approve!

Popsicles have to be one of the easiest treats to make. Not to mention fun to eat.

Making them is super easy. The popsicle part only requires 2 basic ingredients which you probably have right in your kitchen. And you can throw together from start to freezer in under 10 minutes! Of course, it does take a couple of hours for them to set, but if you make them the night before, the waiting time isn’t so bad. 
 
First you’ll need a popsicle molds. I use two sets of six small popsicle sticks for this recipe, but you can use whatever kind you have. Even small paper cups work, too.
 
To make the popsicles, I whip some heavy cream until soft peaks form (even a little runny is okay). Make sure not to over whip it because it will make the mixture too airy and the texture won’t be quite right. 
 
 
Next, fold in chocolate pudding until well blended.
 
 
For the chocolate pudding, I picked up some Chocolate SUPER Snack Pack Pudding Cups from Walmart. These Chocolate Snack Pack Pudding Cups are made with real milk using a new, smoother recipe. I also love that there is no high-fructose corn syrup and no preservatives. I loved seeing these pudding cups in my lunch box as a kid, so it’s nostalgic for me to turn these into an exciting after-school treat! It just took some a lot of self-control for me to not eat the pudding cups so that I could use it in the recipe.
 
 
Next, pour the mixture into the molds and put in the sticks that come with the molds, wooden popsicle sticks or even paper straws. After they’re all filled, put them in the freezer and let them sit for 4 to 6 hours until frozen solid.
 
 
Now, this next part is totally optional, but it’s this little finishing touch that takes these popsicles over the top good! Take some chocolate chips and melt in a heat-safe bowl over simmering water or microwave (my preferred method), stirring frequently. Once it’s melted, let it cool to room temperature. Remove the popsicles from the mold and dip them once at a time, placing on a baking sheet lined with parchment paper. At this time, I like to dress it up with some chopped nuts or colored sprinkles.
 
Once you finish dipping, be sure to quickly place it back in the freezer until the chocolate coating hardens, and you can then enjoy your homemade chocolate fudge popsicles.

Warning: You may never go back to the store bought kind!

Ingredients

  • 1/2 cup heavy cream
  • 1 1/2 cups Chocolate Snack Pack Pudding Cups
  • 1/2 cups chocolate chips melted
  • 1/4 cup chopped nuts or colored sprinkles
  • Popsicle molds and popsicle sticks

Instructions

  • Whip heavy cream until soft peaks form.
  • Fold in chocolate pudding until well blended.
  • Pour mixture into popsicle molds and insert popsicle sticks. Put them in the freezer and freeze for 4 to 6 hours until frozen solid.
  • Remove popsicles from the mold, and dip in melted chocolate. Sprinkle nuts or colored sprinkles on top and place on a baking sheet lined with parchment paper. Quickly place popsicles back in the freezer until the chocolate coating hardens.
  • Enjoy!
