While the heat wave is still on, let’s talk about light and cooling beverages to quench your thirst on hot summer days.  Watermelon Coconut Agua Fresca is simply made from fresh fruit and water blended up and then sweetened to taste.  And it’s so easy to whip up whether you are making two glasses or doubling the recipe to fill a pitcher.

I blend up the drink with coconut water to add more flavor — the result is a fruity, refreshing beverage I know you’ll love!

Watermelon Coconut Agua Fresca does wonder in this summer heat and is perfect for barbecues, picnics, or any outdoor gathering.  This is the kind of drink you could make a pitcher of for the whole family to enjoy in the backyard, pack it into a cooler and bring to the beach, or sip on it after workout.

You can even add a splash of rum or vodka and turn it into cocktails for the adults!  Don’t say I didn’t tell you. ;)

Watermelon Coconut Agua Fresca

Watermelon Coconut Agua Fresca is a sweet, tart, and thirst-quenching drink perfect for summer days!

Ingredients

  • 3 cups seedless watermelon cubes
  • 1 cup coconut water
  • 1 tsp fresh lime juice
  • Simple syrup or sweetener of choice to taste
  • Few sprigs of fresh mint for serving (optional)

Instructions

  • Place watermelon cubes, coconut water, and lime juice in a blender and process until completely smooth. Taste and add sweetener as needed.
  • Serve over ice with fresh mint, or refrigerate until ready to serve. Give it a stir before serving.

Notes

*The amount of sweetener needed will vary depending on the sweetness of the watermelon you are using. I used two packets of Zing™ Zero Calorie Stevia Sweetener in this recipe.
*Variations: substitute watermelon with cantaloupe or pineapple.

To add a bit of sweetness to this drink, I use a touch of simply syrup, but you can also use agave nectar, stevia or monk fruit extract.
