Looking for a hearty slow cooker soup that is packed with flavor and easy to make? Making this delicious, flavorful chicken enchilada quinoa soup is as easy as piling all of the ingredients into a slow cooker. Set it and forget it!

One pot meals are all the rage right now, and rightly so – they make life so easy. My inspiration for this recipe actually comes from a tortilla soup I was making on the stovetop. I had lots of ingredients leftover and wanted to use it up in an easier, slow cooker recipe. So I thought, why not make a spin off? Add a little bit of this and maybe a little bit of that and voila! You’ve got a hearty soup perfect for chilly days.

Chicken Enchilada Quinoa Soup

Ingredients

  • 1 lb boneless skinless chicken breasts cut into chunks
  • 1 cup Village Harvest Red Quinoa rinsed
  • 1 14 oz can kidney beans drained
  • 1 14 oz can pinto beans drained
  • 2 cloves garlic minced
  • 1 28 oz can diced tomatoes
  • 1 4 oz can diced green chilies
  • 1 cup fresh or frozen corn
  • 4 cups low sodium chicken broth
  • 2 cups water
  • 2 cups enchilada sauce
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese cilantro, avocado, sour cream

Instructions

  • Add all ingredients except for toppings into a large slow cooker and mix well.
  • Cook for 3-4 hours on HIGH or 6-8 hours on LOW.
  • Serve with topping if desired.

I always try to incorporate healthy grains into my recipe. I love using quinoa because it cooks easily and gives the dish a boost of protein and texture, and it’s gluten-free too. Red quinoa is slightly chewier and nuttier with a pop of color, but you can always use golden quinoa if you can’t find it.
