The past few weeks have been busier than usual as I have been really stepping up for the final phase of my training – it’s hard to believe the NYC Half-Marathon is in about a week! The training program I’m on has been both intense and time-consuming, but at the same time, my fitness level has gone up tremendously and I have been eating more balanced meals.
Aside from the training program, I have been relying on healthy meal plans to keep me on track! I’d love to say that I plan my meals each week and only buy what I need at the grocery store, but strict meal planning doesn’t work well for me. What I like to do is pick a few dishes I want to make sometime during the week, make sure I have the ingredients on hand, and leave some room for when I don’t feel like cooking.
Here’s what a typical 5-day meal plan looks like:
Breakfast: Greek yogurt with strawberries
Lunch: Taco Lettuce Boats
Dinner: Pan seared pork chops + Coleslaw with Creamy Lemon Tahini Dressing
Breakfast: Apple Pie Smoothie
Lunch: Chicken Enchilada Quinoa Soup
Dinner: Grilled chicken breasts + Curried Carrot and Chickpea Salad
Breakfast: Almond Blueberry Oatmeal Bars
Lunch: Greek Chickpea Salad
Dinner: Dining out
Some of these dishes can be made ahead (enchilada soup and oatmeal bars). I like to pack and freeze them in individual portions so that they can be easily reheated for future meals. Don’t forget to download this handy 5-day meal plan with shopping list!
