Thanksgiving is a little over a week away – are you ready for it?  Last week I shared a revamped holiday recipe in the form of Jalapeño Orange Cranberry Sauce and today I’ve got another Thanksgiving essential side dish: mashed potatoes!  Thick, tangy sour cream and fresh chives are swirled into buttery, creamy mashed potatoes.  I love adding sour cream to my mashed potatoes because it adds an extra layer of richness and the fresh chives just give the potatoes a subtle onion flavor without being overpowering.

Whether you’re hosting Thanksgiving this year or need a simple dish to bring, this is the potato side dish you’d want to make – super easy yet so full of flavor.  It’s also a great make-ahead dish because you can cook and mash the potatoes with butter, milk, and sour cream then stash in the freezer.  When you are ready to serve, reheat them in the microwave, stirring after every minute, and fold in fresh chives at the end.

Sour Cream and Chive Mashed Potatoes

Sour Cream and Chive Mashed Potatoes is an easy and delicious side dish that is perfect for serving during the holidays or any time of the year.

Ingredients

  • 2 lbs russet or Yukon gold potatoes peeled and cubed
  • 2 tbsps unsalted butter melted
  • ½ cup milk
  • ½ cup sour cream
  • 2 tbsps fresh chives finely chopped , plus more for garnish
  • Salt and pepper to taste

Instructions

  • Place the potatoes in a large saucepan and cover with cold water. Bring to a boil, then reduce to a simmer and cook until the potatoes are fork tender, about 15 to 20 minutes. Drain well.
  • In a large bowl, mash the potatoes with a potato masher and fold in melted butter, half-and-half, sour cream, and chopped chives until just incorporated. Add more milk if necessary to achieve desired consistency. Season with salt and pepper to taste.
  • Garnish with additional chives and serve immediately.

Now that we have the turkey, gravy, and mashed potatoes taken care of, let’s discuss how you can plan a Thanksgiving meal to make the process less stressful and far more enjoyable.

Tips on Planning a Stress-Free Thanksgiving Dinner

  • Try to include some make-ahead dishes so you can get a lot of cooking done before Thanksgiving Day. Stuffing, mashed potatoes, gravies, and pie filling can usually be made ahead.
  • Print out the recipes so you don’t have to go back and search for them. You don’t want to wait until the last minute to frantically look up the cooking directions.
  • Pay attention to cooking temperatures. Since the turkey already the majority of the oven the entire time, try to stick to recipes that can be cooked at the same oven temperature.  You might also want to consider different cooking methods (i.e., on the stovetop, slow cooker) or dishes that can be served at room temperature.
  • If preparing everything from appetizer to desserts plus the side dishes and turkey proves to be too overwhelming, don’t be afraid to ask for help!  Ask dinner guests to bring dinner rolls, their favorite cheeses and crackers, wine, beer, or their beverages of choice.
  • Once you have a game plan, stock up early.  The days leading up to Thanksgiving are a bit chaotic in the grocery stores, so go early and purchase as many non-perishable items as you can before the last minute rush hits the stores.
