Sour Cream and Chive Mashed Potatoes

Sour Cream and Chive Mashed Potatoes is an easy and delicious side dish that is perfect for serving during the holidays or any time of the year.

Ingredients

  • 2 lbs russet or Yukon gold potatoes peeled and cubed
  • 2 tbsps unsalted butter melted
  • ½ cup milk
  • ½ cup sour cream
  • 2 tbsps fresh chives finely chopped , plus more for garnish
  • Salt and pepper to taste

Instructions

  • Place the potatoes in a large saucepan and cover with cold water. Bring to a boil, then reduce to a simmer and cook until the potatoes are fork tender, about 15 to 20 minutes. Drain well.
  • In a large bowl, mash the potatoes with a potato masher and fold in melted butter, half-and-half, sour cream, and chopped chives until just incorporated. Add more milk if necessary to achieve desired consistency. Season with salt and pepper to taste.
  • Garnish with additional chives and serve immediately.
