Sesame Teriyaki Salmon

Succulent pan-seared salmon with a delicious sweet and savory sesame teriyaki sauce.  Perfect for an easy, healthy weeknight meal.

I’m on a salmon kick, and cannot be stopped!  Not that I want to be stopped, I mean it’s salmon after all, not leftover Easter chocolate eggs ;)

I always seem to forget about salmon as an easy dinner option, which is unfortunate because it really is the perfect protein.  Quick cooking, full of essential omega-3 fatty acids, delicious, and perfect for weeknight meals.  Did I mention it’s quick cooking!?

Fresh salmon fillets are marinated in a sweet and savory concoction, then pan seared until crispy and golden brown on the outside, yet tender and succulent on the inside.

The teriyaki marinade for the salmon (or chicken, pork, or beef if you don’t like salmon) benefits from the addition of fresh garlic and ginger, has a little heat from the sriracha, and really does a great job of permeating the fish and giving it tons of flavor.  There’s nothing like it!

Sesame Teriyaki Salmon

Ingredients

  • ¼ cup reduced sodium soy sauce
  • ¼ cup mirin
  • 1 tbsp rice vinegar
  • 1 tsp sriracha or to taste
  • ½ tsp sesame oil
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 2 6- oz salmon fillets about ¾ inch thick
  • Toasted sesame seeds for garnish

Instructions

  • Whisk together soy sauce, mirin, rice vinegar, sriracha, sesame oil, garlic, and ginger in a small bowl. Place mixture and salmon fillets into a ziplock plastic bag. Seal and marinate for 30 minutes, turning the bag occasionally.
  • Remove the salmon fillets from the bag, reserving the marinade.
  • In a large non-stick skillet coated with cooking spray, cook fish (skin side down) for 4 minutes over medium low heat until the skin is golden brown and crispy. Turn and cook until the other side is browned and fish is cooked through, about 4 more minutes. Set aside and keep warm.
  • Add reserved marinade to the skillet and simmer on low until the sauce is thickened. Serve teriyaki sauce over salmon fillets and garnish with sesame seeds. Serve immediately.

Notes

*Fish is cooked when it flakes easily and is barely opaque in the middle.
