Pimento Cheese Dip

Serve this creamy Pimento Cheese Dip with your favorite crackers and veggie sticks or as a sandwich spread.

Recently when I was visiting Atlanta, I was introduced to pimento cheese dip for the first time…but as with all dips, the little bowl is never enough, am I right? At first I thought pimento cheese was some type of cheese and it wouldn’t be easily find in New York. After some research I found that this popular Southern dip is super easy to make.

This Pimento Cheese Dip is perfect for tailgating, football games, picnics, summer parties…can you see where I’m going with this? What am trying to say is this dip good anytime, anywhere! It’s also a great make ahead appetizer, too.

Just combine all of the ingredients in a mixer, or simply mix by hand. Now, I know you will be tempted to dig into this dip right away, but the flavor and texture do get better with time so it’s important to let it chill in the fridge.

It’s almost summertime and there is a ton going on, including the soccer games coming up. My family loves watching soccer games and have always supported the various teams, so we have lots of fun cheering our favorite teams on as they progress with their rounds.

As with any game watching, snacks and drinks are some of the highlights. I made it with my sister for game watching this past weekend and it was so good she made an extra batch to take home!

Pimento Cheese Dip

Serve this creamy Pimento Cheese Dip with your favorite crackers and veggie sticks or as a sandwich spread.

Ingredients

  • 1 cup shredded Mexican blend cheese
  • 1 cup shredded smoked gouda cheese
  • 4 oz cream cheese softened
  • 1/4 cup Greek yogurt
  • 1/4 cup pimentos diced
  • 1 fresh jalapeno pepper seeded and minced (optional)
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

Instructions

  • Place all ingredients in a large mixing bowl or food processor and combine until well blended.
  • Chill in the fridge for at least 30 minutes before serving.

You’ll be able to find Modelo Especial and Modelo Negra in your local store’s beer aisle!
