Once again I’m thinking ahead to the game day parties coming up.  I love watching the Big Game, because it is all about people getting together, eating great foods, and judging the best commercials just as it is about the teams playing football.  I won’t be complaining, in fact I think all that makes up for a good time!

Which route do you take when it comes to game day entertaining?  Do you like to make wings and dips from scratch?  Or create a delicious spread of pizzas and breadsticks?  Whether serving pizza for Football Sunday, as a party food, or for on pizza night… you name the occasion, a fresh salad is sometimes all you need to round out the meal and this Greek Chopped Salad will do the trick.

This chopped salad is loaded with a medley of tomatoes, bell peppers, cucumbers, Kalamata olives, crumbled feta cheese, and a zesty lemon mustard dressing.  There is so much happening here. So much flavor and so many textures all in one bowl.

Greek Chopped Salad with Lemon Vinaigrette

Perfect for potluck and football games, this Greek Chopped Salad loaded with crunchy vegetables and a zesty lemon dressing makes for a refreshing side dish!

Ingredients

For the dressing:

  • ¼ cup olive oil
  • 1 tbsp red wine vinegar
  • 2 tbsps fresh lemon juice
  • 1 tsp Dijon mustard
  • Zest of one lemon
  • ½ tsp dried oregano
  • Salt and pepper to taste

For the salad:

  • 1 large cucumber chopped
  • 1 green pepper chopped
  • 2 plum tomatoes chopped
  • 1 small red onion chopped
  • ½ cup Kalamata olives pitted and diced
  • ½ cup feta cheese crumbled

Instructions

  • In a bowl, whisk together dressing ingredients until well blended. Season with salt and pepper to taste.
  • Place salad ingredients and dressing in a mixing bowl and toss gently to combine. Refrigerate until ready to serve.

It’s a perfect side dish to pair with pizzas on game day, and for me, it’s Red Baron Thin & Crispy Pepperoni pizzas.  Red Baron pizzas and Mrs. Smiths pies are easy and convenient options for hosting football parties.  Pick them up at Walmart to save you time in the kitchen and to make game day entertaining a success.
