Ingredients
For the dressing:
¼cupolive oil
1tbspred wine vinegar
2tbspsfresh lemon juice
1tspDijon mustard
Zest of one lemon
½tspdried oregano
Salt and pepperto taste
For the salad:
1large cucumberchopped
1green pepperchopped
2plum tomatoeschopped
1small red onionchopped
½cupKalamata olivespitted and diced
½cupfeta cheesecrumbled
Instructions
In a bowl, whisk together dressing ingredients until well blended. Season with salt and pepper to taste.
Place salad ingredients and dressing in a mixing bowl and toss gently to combine. Refrigerate until ready to serve.
