During this time of the year, I swap out my usual smoothies and cold cereal bowls for warm, comforting breakfast. I’ve been trying to use different grains in my oatmeal bowl and this one with quinoa and old fashioned oats has been a recent favorite.

Having a nice hearty bowl of quinoa oatmeal will fill you up with plenty of wholesome nutrients and keep you fueled all morning. Even better if you have leftover cooked quinoa — that’ll shorten the cooking time!

Creamy Coconut Quinoa Oatmeal

Ingredients

  • 1/2 cup old fashioned oats
  • 1/4 cup quinoa rinsed and drained
  • 1/2 cup water
  • 3/4 cup coconut milk
  • Pinch of salt
  • 1/2 tsp vanilla extract
  • 1 1/2 tsp Truvia® Natural Sweetener Spoonable more or less to taste
  • Toppings: cinnamon sliced strawberries, kiwi, coconut flakes, toasted nuts

Instructions

  • Combine oats, quinoa, water, coconut milk, and salt in a medium saucepan and bring to a boil.
  • Reduce to a simmer and cook, stirring occasionally, until most of the liquid is absorbed and the texture is creamy, about 15 minutes. Stir in vanilla extract and Truvia® Natural Sweetener Spoonable.
  • Divide into two bowls and serve warm with desired toppings.
