Carrot Cake Oatmeal with Maple Yogurt Frosting

You can probably tell by now how much I enjoy breakfast foods.  Eating a fresh, healthy breakfast helps me fuel up for the day so that I’m not running on empty.  This Carrot Cake Oatmeal is a great way to start the morning off right.  I mean, who doesn’t like cake for breakfast?!

This oatmeal incorporates ingredients that are reminiscent of carrot cake like shredded carrots, raisins, and cinnamon, topped with a dollop of creamy “frosting” made with thick Greek yogurt and maple syrup.  This is the type of dessert for breakfast dish you’ll feel good eating.

Carrot Cake Oatmeal with Maple Yogurt Frosting

Ingredients

  • 1 cup old fashioned oats
  • 2 cups milk or water
  • 1/2 cup grated carrots
  • 2 tbsps raisins
  • 2 tbsps maple syrup
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • Pinch of salt
  • 1/2 cup Greek yogurt
  • 1 tsp maple syrup
  • 1/4 cup chopped walnuts pecans, or pumpkin seeds

Instructions

  • In a medium saucepan over medium high heat, combine oats, milk, grated carrots, raisins, maple syrup, cinnamon, nutmeg, and a pinch of salt.
  • Cook until the mixture has thickened up, about 8 minutes, stirring frequently.
  • Divide oatmeal into two bowls and top with Greek yogurt mixed with maple syrup and chopped nuts. Serve warm.
