Every time I make this dish, I think of my favorite Mexican restaurant down here in Texas. Just like everything in Texas, everything is bigger and better, including the flavors! I I love all their Tex-Mex dishes, from enchiladas to tostadas to tacos, especially the ones with the chicken tinga filling.

Traditionally, chicken tinga is a stew-like comfort food, made with shredded chicken, tomatoes, onions, and chipotle peppers. It is often served in tacos topped with queso fresco along with rice and refried beans. But did you know that you can turn it into a pasta dish with Tex-Italian flair?

This Creamy Chicken Tinga Pasta is my Texas inspired take on tomato sauce based chicken pasta, with smoky and spicy chipotle peppers in adobo sauce, cumin, and oregano. I finished it with a bit of heavy cream to give it some richness. It’s a dish the whole family will love!

This recipe is super easy and versatile, made with just one skillet (yes, only one skillet to wash!) but definitely not lacking in terms of flavor! Plus who can pass up pasta coated with that smoky and velvety smooth sauce?

Here are some chicken tinga pasta tips to make it your own:

  • You can add vegetables such as peppers, broccoli, and spinach for more color and flavor.
  • Half and half can be used in place of the heavy cream.
  • I used shredded chicken thigh but feel free to use chicken breast. Rotisserie chicken would be great here too!
  • Freshly diced tomatoes can be used in place of the canned tomatoes.

Creamy Chicken Tinga Pasta

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 2 chipotle peppers in adobo sauce chopped
  • 14.5 oz canned diced tomatoes
  • 3 cups chicken broth more if necessary
  • 2 cups cooked chicken shredded
  • 12 oz large box of Skinner Elbows
  • 1/2 cup heavy cream
  • 1 tbsp cilantro chopped

Instructions

  • Heat oil in a large skillet over medium heat. Saute onions and garlic for 3 minutes or until tender, stirring occasionally.
  • Stir in the oregano, cumin, chipotle peppers, and cook for a minute.
  • Add in the tomatoes and chicken broth, and bring to a boil. Add shredded chicken and Skinner Elbows pasta.
  • Let simmer for about 12 minutes or until tender and thickened, stirring often and adding more broth if necessary. When pasta is ready, stir in heavy cream.
  • Season with salt and pepper to taste, and garnish with cilantro just before serving.
