Why make queso dip from scratch when you can buy it at the store?  That’s the question my friend asked when I was recently chatting with her about this popular dip served at Tex Mex restaurants.  Of course you’d want to make it from scratch, I said.  Especially since you can add make a cheese dip even better if that’s at all possible!  And that’s what got me inspired to make this Fire Roasted Corn Queso Dip.

After doing a little recipe testing, a few adjustments here and there, I finally ended up with a skillet of bubbly, silky smooth, creamy corn queso dip.  Serve it up piping hot with a pile of tortilla chips and garnish with all the fixin’s as you’d like, then dip, eat and repeat.  I hope you give this one a try, because you’re going to love it!

There is a couple of ingredients that make this dip extra delicious. First, I added fire roasted corn to give it a summer twist and it was the best decision ever!  You can roast fresh corn on the cob, or to save time, you can use frozen fire roasted corn which is available in a lot of supermarkets.  Next, I added some diced green chile for heat and chipotle chile for a touch of smokiness.  Finally, the most important part of queso dip – the CHEESE!

In this recipe I used sharp cheddar cheese from Heluva Good!® Block Cheese, which can be found at the dairy aisle of my local Walmart, along with an assortment of flavors to choose from.  Heluva Good cheeses are perfect for any occasion, and are versatile enough for every day recipes.  Heluva Good cheeses are gluten free and made with milk, which makes them a good source of protein and calcium. Instead of cheddar, feel free to experiment with a combination of cheeses like Colby or Pepper Jack to create your own signature queso dip.

Fire Roasted Corn Queso Dip

Ingredients

  • 1 tbsp unsalted butter
  • 1 small shallots diced
  • 1 tbsp chipotle chiles in adobo sauce minced
  • 4 oz can diced green chiles drained
  • 1 cup fire roasted corn kernels
  • 1 tbsp cornstarch
  • 1 1/2 cup milk
  • 1/4 tsp garlic powder
  • 1/4 tsp cumin
  • 4 oz cream cheese cut into cubes and softened
  • 10 oz Heluva Good sharp cheddar cheese shredded
  • Salt and pepper to taste
  • Diced tomatoes or pico de gallo and tortilla chips for serving

Instructions

  • In a large skillet or saucepan over medium heat, melt butter and saute shallots until soft and fragrant. Add the chiles and corn kernels, and saute for 2 minutes.
  • Stir in corn starch until well blended.
  • Whisk in milk, garlic powder, cumin, and cream cheese and bring to a low simmer, stirring occasionally, until the mixture becomes smooth.
  • Add shredded cheese gradually and continue to stir until smooth and creamy.
  • Season with salt and pepper to taste. Serve warm with tortilla chips.

Notes

To make this dip ahead of time, place a piece of plastic wrap directly on top of the dip to prevent a skin from forming and refrigerate for up to 3 days. Reheat in microwave or small saucepan, adding milk or water as needed to adjust consistency.
