Cashew Butter Honey Granola Bars

Dense, chewy granola bars filled with wholesome ingredients and naturally sweetened with honey.

I have been tinkering with granola bar recipes lately and after about six or seven batches, I’ve finally found one that produces thick, dense granola bars that stay intact instead of crumbling into pieces.

Pantry staples like oats, toasted almonds, and raisins are bind together with a sticky mixture of honey and cashew butter, then baked until they are golden brown on top.  Baking is optional (you can just refrigerate for an hour instead of baking), but I think baking the granola bars makes them taste better.

Nut butter + Honey + Cinnamon = perfect flavor trifecta!

I’m not sure what the best part about this recipe is…the flavor of nut butter or the fact that these bars have some serious staying power. These protein-rich granola bars are dense, chewy, and nutritious — I put them in our cookie jar and they didn’t last long.

Can you see how easy it is to customize this recipe to your liking?  Choose your favorite nut butter — I used Artisana’s Raw Cashew Butter, and I promise I won’t judge you if you opt for Nutella :)  Then add your favorite dried fruit, chocolate chips, chopped nuts, seeds, or anything else that sounds like it would taste delicious in a granola bar.

These portable bars are great for breakfast or mid-afternoon snacking.  This is a recipe that will resurface in my kitchen many times in the future.

Cashew Butter Honey Granola Bars

Servings 8 bars

Ingredients

  • 2 cups old fashioned oats
  • 1 cup toasted almonds coarsely chopped
  • ½ cup raisins
  • 1 cup cashew butter or other nut butter
  • ½ cup honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  • Preheat oven to 350F. Line a 8-inch square baking pan with parchment paper and set aside.
  • In a large mixing bowl, combine oats, almonds, and raisins.
  • Meanwhile, combine cashew butter and honey in a microwave-safe bowl, and heat on medium for about 30 seconds or until the mixture is warm. Add cinnamon and vanilla extract and mix well.
  • Pour the wet ingredients into the dry ingredients and mix together until the ingredients are well coated. Transfer the mixture to the prepared baking pan and pack down as firmly and evenly as possible.
  • Bake for 20-25 minutes until the edges are lightly browned.
  • Remove and let cool completely. Using a sharp knife, slice into 8 bars.

Notes

*To toast almonds, arrange in a single layer on a baking sheet and bake in a 350 F oven until lightly browned, about 8 to 10 minutes.
