Bacon lovers rejoice! In my opinion, more things should probably be wrapped in bacon, so today…we’ve got bacon wrapped asparagus. It is without a doubt one of the most flavorful veggie side dish you can make and you are going to love it. We can always use more bacon, right?

These bacon wrapped asparagus can be prepared ahead and are perfect for cookout. Simply wrap the asparagus bundles with bacon, secure with toothpicks and refrigerate until you are ready to cook them. You can roast them in the oven or place them directly on the grill, just make sure to keep an eye on them so the asparagus doesn’t get overly soft. If the asparagus is tender and the bacon is still not crispy, place it under the broiler for a few minutes to make it extra crispy.

  • Garlic salt

Tips for perfect bacon wrapped asparagus:

    • Line your baking sheet with parchment paper or aluminum foil coated with cooking spray for easy clean up and so that the bacon doesn’t stick.
    • Cut or snap off the bottom ends of the asparagus stems to remove the woody part (you can save it for making homemade stock later).
    • When picking asparagus, I prefer the ones that are firm with deep green stalks and a bit of purple at the tips.
    • It’s best to use medium sized asparagus stalks for this recipe. The thin ones won’t hold up to roasting or grilling, and if you use thick asparagus it may not cook all the way through before the bacon is done.

Ingredients

  • 1 lb asparagus trimmed
  • 1 tbsp olive oil
  • 1/2 tsp garlic salt
  • Black pepper to taste
  • 8 slices thick cut bacon

Instructions

  • Preheat oven to 400°F.
  • Place asparagus on a baking sheet and toss with olive oil, garlic salt, and pepper.
  • Tightly wrap one slice of bacon around 5-6 asparagus spears. Secure with a toothpick and place seam side down on the baking sheet.
  • Bake for 15-20 minutes or until the asparagus is tender and the bacon is crispy.
