Ingredients
- 4 cups frozen pineapple chunks
- 1 cup coconut milk full-fat unsweetened
- 1 tbsp lime juice
- 1 tbsp granulated sugar or maple syrup (optional)
Instructions
- Combine all ingredients in a blender or food processor, and blend until smooth, about 2-3 minutes.
- If the mixture is too thick to blend, add a tablespoon of pineapple juice or coconut milk at a time until the mixture comes together.
- Scoop or pipe into serving cups and garnish with fresh pineapple. Serve immediately.
