Cashew Butter Honey Granola Bars

Ingredients

  • 2 cups old fashioned oats
  • 1 cup toasted almonds coarsely chopped
  • ½ cup raisins
  • 1 cup cashew butter or other nut butter
  • ½ cup honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  • Preheat oven to 350F. Line a 8-inch square baking pan with parchment paper and set aside.
  • In a large mixing bowl, combine oats, almonds, and raisins.
  • Meanwhile, combine cashew butter and honey in a microwave-safe bowl, and heat on medium for about 30 seconds or until the mixture is warm. Add cinnamon and vanilla extract and mix well.
  • Pour the wet ingredients into the dry ingredients and mix together until the ingredients are well coated. Transfer the mixture to the prepared baking pan and pack down as firmly and evenly as possible.
  • Bake for 20-25 minutes until the edges are lightly browned.
  • Remove and let cool completely. Using a sharp knife, slice into 8 bars.

Notes

*To toast almonds, arrange in a single layer on a baking sheet and bake in a 350 F oven until lightly browned, about 8 to 10 minutes.
