Shepherd's pie with a special twist - everyone gathered around your holiday breakfast table will love this one!

Ingredients
1lbJimmy Dean® Roll SausageRegular
1medium oniondiced
2bell peppersseeded and diced
6large eggs
1cupmilk
¾cupshredded cheddar cheese
Salt and pepperto taste
1 2lbpackage frozen hash brown potatoesthawed
Chopped parsleyfor garnish
Instructions
Preheat oven to 350F. Coat a casserole dish with cooking spray and set aside.
In a large skillet over medium high heat, cook sausages, onions and pepper until meat is crumbly and no longer pink and vegetable are softened. Season with salt and pepper to taste and spread in prepared casserole dish.
In a large bowl, beat together eggs, milk and cheese just until blended. Season with salt and pepper and pour over sausage mixture.
Sprinkle potatoes evenly on top, pressing into the egg mixture. Spray the top lightly with cooking spray and cover with aluminum foil. Bake for 30 minutes, uncover and bake for 15 more minutes until the top is golden brown. Garnish with parsley before serving.
