With the holiday season approaching, I’m sure many of us will have house guests at our homes or friends coming over for holiday breakfast. Breakfast is the most important meal of the day, but sometimes it can also be the most overlooked. I’m always looking for new breakfast ideas to bring to the table, and this Breakfast Shepherd’s Pie is the perfect dish to share with friends for the holidays!

Shepherd’s pie is typically a dinner casserole with a layer of meat and vegetables, topped with potatoes and baked until golden brown. I wanted to give it a special breakfast twist for the holidays by topping a layer of sausage, onions and peppers with eggs, cheese, and potatoes, then baked in the oven until the top is nicely browned and crispy. It’s got everything you need for a great start to the day!

This no-fuss breakfast dish is easy to make ahead, which means you can just pop it into the oven for reheating in the morning. The less time I spend in the kitchen and the more time around the table with my guests the better.

Ingredients

  • 1 lb Jimmy Dean® Roll Sausage Regular
  • 1 medium onion diced
  • 2 bell peppers seeded and diced
  • 6 large eggs
  • 1 cup milk
  • ¾ cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 2 lb package frozen hash brown potatoes thawed
  • Chopped parsley for garnish

Instructions

  • Preheat oven to 350F. Coat a casserole dish with cooking spray and set aside.
  • In a large skillet over medium high heat, cook sausages, onions and pepper until meat is crumbly and no longer pink and vegetable are softened. Season with salt and pepper to taste and spread in prepared casserole dish.
  • In a large bowl, beat together eggs, milk and cheese just until blended. Season with salt and pepper and pour over sausage mixture.
  • Sprinkle potatoes evenly on top, pressing into the egg mixture. Spray the top lightly with cooking spray and cover with aluminum foil. Bake for 30 minutes, uncover and bake for 15 more minutes until the top is golden brown. Garnish with parsley before serving.

I used Jimmy Dean® Roll Sausage for this recipe since it has a unique blend of seasonings that make the dish really stand out. And it’s not just for breakfast, it’s also versatile enough for savory holiday dishes like stuffing and casseroles.  By the way, while stopping by Walmart to pick up the sausage for this recipe, I also picked up few packs of these Hillshire Farm® Lit’l Smokies®.

breakfast-shepherds-pie-6 What are your favorite ways to serve these cocktail sausages? Mine is definitely with smoky barbecue sauce, cooked in the slow cooker on low for 3 to 4 hours, then you’ve got a great appetizer for your guests. It’s really a cinch to make.
