Combine oats, quinoa, water, coconut milk, and salt in a medium saucepan and bring to a boil.
Reduce to a simmer and cook, stirring occasionally, until most of the liquid is absorbed and the texture is creamy, about 15 minutes. Stir in vanilla extract and Truvia® Natural Sweetener Spoonable.
Divide into two bowls and serve warm with desired toppings.
