Creamy Coconut Quinoa Oatmeal

Ingredients

  • 1/2 cup old fashioned oats
  • 1/4 cup quinoa rinsed and drained
  • 1/2 cup water
  • 3/4 cup coconut milk
  • Pinch of salt
  • 1/2 tsp vanilla extract
  • 1 1/2 tsp Truvia® Natural Sweetener Spoonable more or less to taste
  • Toppings: cinnamon sliced strawberries, kiwi, coconut flakes, toasted nuts

Instructions

  • Combine oats, quinoa, water, coconut milk, and salt in a medium saucepan and bring to a boil.
  • Reduce to a simmer and cook, stirring occasionally, until most of the liquid is absorbed and the texture is creamy, about 15 minutes. Stir in vanilla extract and Truvia® Natural Sweetener Spoonable.
  • Divide into two bowls and serve warm with desired toppings.
