Monte Cristo Waffle Sandwiches

Monte Cristo Waffle Sandwiches combine savory ham and cheese melt, French toast, and waffles – all in one bite!

Ingredients

  • 4 tbsp raspberry jam
  • 8 Eggo homestyle waffles thawed
  • 2 tsps Dijon mustard
  • 8 slices Swiss cheese
  • 12 oz thin-sliced honey ham
  • 4 large eggs
  • 1/2 cup milk
  • 2 tbsps unsalted butter
  • Confectioners' sugar and maple syrup for serving

Instructions

  • Spread 1 tablespoon raspberry jam on each of the four waffles. Place Swiss cheese and ham slices on top. Spread 1/2 teaspoon Dijon mustard on each of the other four waffles and top each sandwich.
  • Whisk together eggs and milk in shallow dish. In a large nonstick skillet, melt butter over medium heat. Dip sandwiches into egg mixture, allowing excess to drip off, then add to pan. Cook on each side for about 2 minutes or until golden brown and cheese has melted.
  • Cut each sandwich into halves and dust confectioners' sugar on top. Serve warm with maple syrup.
