Beef Burrito Rice Skillet

This easy, delicious beef burrito rice skillet is the perfect one-pan dish and sure to be a hit at your next fiesta or weeknight dinner.

Ingredients

  • 1 lb lean ground beef
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 1/2 tsp chili powder
  • 1/2 tsp ground cumin
  • 1 cup long grain white rice
  • 2 cups beef or chicken broth
  • 1 14.5 oz can RO*TEL drained
  • 1 15 oz can black beans drained and rinsed
  • 3/4 cup shredded Mexican blend cheese
  • Salt and pepper to taste
  • Topping options: sour cream chopped cilantro, avocado. sliced jalapenos

Instructions

  • In a large skillet over medium heat, brown beef until no longer pink, about 5 minutes.
  • Add onions and garlic and cook until softened, then add chili powder, cumin, rice, beef broth, RO*TEL, and black beans.
  • Bring to a boil, then cover and reduce to a simmer. Cook for about 15-20 minutes, or until the rice is tender and most of the liquid is absorbed.
  • Sprinkle cheese on top and allow cheese to melt. Top with desired toppings and serve immediately.
