Beef Burrito Rice Skillet
This easy, delicious beef burrito rice skillet is the perfect one-pan dish and sure to be a hit at your next fiesta or weeknight dinner.

- 1 lb lean ground beef
- 1 small onion diced
- 3 cloves garlic minced
- 1 1/2 tsp chili powder
- 1/2 tsp ground cumin
- 1 cup long grain white rice
- 2 cups beef or chicken broth
- 1 14.5 oz can RO*TEL drained
- 1 15 oz can black beans drained and rinsed
- 3/4 cup shredded Mexican blend cheese
- Salt and pepper to taste
- Topping options: sour cream chopped cilantro, avocado. sliced jalapenos
In a large skillet over medium heat, brown beef until no longer pink, about 5 minutes.
Add onions and garlic and cook until softened, then add chili powder, cumin, rice, beef broth, RO*TEL, and black beans.
Bring to a boil, then cover and reduce to a simmer. Cook for about 15-20 minutes, or until the rice is tender and most of the liquid is absorbed.
Sprinkle cheese on top and allow cheese to melt. Top with desired toppings and serve immediately.
