{WIAW 14} Post-Vacation Eats

In case you’ve just tuned in, every Wednesday I share some of the foods I eat in a day.  Thanks to Jenn at Peas and Crayon for hosting this week’s What I Ate Wednesday!

What I Ate Wednesday is back this week and it’s going to be all about post-vacation eats!

As some of you probably notice from Instagram, my posts have been far and few in between over the past two weeks while James and I were vacationing in the Caribbean.  We are back home in NYC and I already miss the bright turquoise water and smooth white sand on my toes.  The smell of the ocean, too.  I just can’t wait to share my travel posts with you!

In the meantime, here is what I munched on today:

For breakfast, I had my usual granola and yogurt with two small nectarines I picked up at the farmer’s market.  I have been eating nectarines for the past few months that were hit-or-miss (mostly misses), but these beauties I got were just perfectly sweet and juicy!  There’s nothing like tree-ripen peaches and nectarines.

Lunch time came around and I was so glad I prepped my lunch earlier this week (like I have been doing lately).  I know there isn’t much variety involved over the course of a week, but it really is a working girl’s best friend.  This week, I’ve got Tex-Mex chicken (chicken tenders seasoned with my homemade taco seasoning mix) served with garlic roasted green beans and mushrooms.

By the way, if you want to start these lunch box routines, I highly recommend making dishes that are good for freezing.  On days when I do have the time to pick up lunch nearby or eat with my coworkers, I just tuck my lunchbox into the freezer and save it for another day.  PS: roasted carrots do not taste good once frozen and reheated.

Afternoon snack was a dairy-free ice cream sandwich from So Delicious made with coconut milk.  In addition to the creamy texture and light coconut flavor, I love that the portion size is just right for a small treat so I don’t feel too bad snacking on them.

Dinner was something I was super excited about!  I have been craving for these Thai Sriracha Lime Wings since before our vacation, and this time I added a big spoonful of tom yum paste for experimentation. They turned out excellent!  Plus, fresh in-season corn on the cob on the side.

James and I also enjoyed a bottle of Lambrusco with dinner.  If you’ve never tried it before, go get yourself a bottle!  It’s a sparkling red wine served chilled, which was just perfect with the warm weather we’ve been experiencing lately.

So that’s that for now!  My eats for the day were mostly healthy, with a little splurge on wings and wine for dinner, which was totally worth it. :)
