What I Ate Wednesday

{WIAW 12} 6-Juice Blend

Last Updated on July 18, 2016 by Karen

In case you’ve just tuned in, every Wednesday I share some of the foods I eat in a day.  Thanks to Jenn at Peas and Crayon for hosting What I Ate Wednesday!

Happy Wednesday and April Fools’ Day.  Did you get pranked or have any good tricks up your sleeve? ;) James got me real good when he told me he missed his flight home and was rebooked for tomorrow — and I believed it! Whooops!

In other news…breakfast of the day.  I had almond butter on whole wheat toasts with a glass of orange peach mango juice from TJ’s.  I discovered this blend recently and have been really loving it.  It’s actually a blend of six juices (apple, pineapple, white grape, orange, peach, and mango) perfect for drinking plain or making smoothies.  I am thinking it would be great in mimosa and sangria, too.

Lunch was a sandwich I picked up from Whole Foods with turkey, brie, and green apple.  You can’t go wrong with this combo.

I brought a Minneola tangelo for late afternoon snacking.  Tangelos taste like tangerine but the size of the segments is similiar to oranges.  I love that they are not a lot of work to peel and are perfectly sweet and satisfying.

Finally, dinner was easy and fastCheese tortellini in pesto sauce served with some garlic knots I made using storebought buttermilk biscuit dough.  I haven’t used storebought biscuit dough in ages, and lately, I’m rediscovering how versatile they can be!  Seriously it took me under 30 minutes to prep and bake the garlic knots.

I actually love my homemade version more than the pizzeria garlic knots made from pizza dough – the texture is fluffy and not as dense.

By the way, my department just installed a new water cooler that dispenses sparkling water — it just made drinking water so much more fun!  We also received these recyclable glass bottles, which you bet I’ll be filling it up all day long :)

I was thinking of getting some lemon flavored water enhancers to make sparkling lemonade.  Have you tried them?  If so, which brand/flavor do you recommend?

  1. Oooh I LOVE turkey and brie! Brie is one of those cheese that is so versatile, but there’s something so good about it with turkey. Yum! Great eats :)

  2. Those bottles are adorable, and so environmental!

  3. Everything looks great:) I haven’t had any sparkling lemonade…But I hear that the lemonade flavored coconut water is good!
