In case you’ve just tuned in, every Wednesday I share some of the foods I eat in a day. Thanks to Jenn at Peas and Crayon for hosting What I Ate Wednesday!
Today’s breakfast included a Wild Blueberry and Almond Mojo bar and a Fage 0% Greek yogurt in Mango Guanabana flavor. I spotted this flavor at the grocery store and couldn’t wait to try it. And it tastes just as good as it sounds — the sweet and tropical flavors just transport me to somewhere warm and sunny, even if it’s just in the mind ;)
I have a bunch of fresh mint on hand leftover from making Thai Chicken Laab, so I made a bottle of infused water before I left for work. I call this Strawberry Mojito Water because it has all of the flavors of the cocktail but without the alcohol of course. I was able to get four flavorful refills throughout the day.
For lunch, a few coworkers suggested we try out the Restaurant Week menu at Tribeca Grill (the legendary Robert De Niro is a part owner) – uhh, I couldn’t say no to that! If you’re visiting NYC during summer or winter Restaurant Week, be sure to check out the list of participating restaurants. I prefer RW lunches over dinners because the service is usually not as rushed – you can take your time to savor every bite without feeling pressured to take the check. Plus, the lunches are less expensive than dinners and you’re basically ordering from the same menu.
Here’s what I ordered today:
To start, I had the Baby Beet Salad with Asian Pear, Hazelnuts, and Goat Cheese, which was refreshing and not overdressed. I didn’t get any goat cheese on mine though, unless it was the white dusting on top?
For my entree, I had the Grilled Salmon with Lemon, Thyme, Arugula, and White Beans. I don’t order fish very often, but this dish has all of my favorite ingredients. The fish was cooked perfectly and was super moist and tender on the inside!
Finally, the dessert course of Apple, Pear, and Cranberry Crumble was the perfect finish to my lunch. It had a good mix of sweet, tart, tender, crunchy, hot, and cold. Overall, I feel that the menu and portion size is very well balanced – I enjoyed every course and left comfortably satisfied but not stuffed, which is how I like it. Everyone raved about their selections, too!
After work, Mother Nature blessed us with more snow/sleet and despite the urge to head home and curl up on the couch, I headed to the gym for a sweat session. I haven’t worked out in over three weeks after hurting my right ankle, and now that it’s healed, I was rather excited to spend some time on the treadmill. 470 calories burned, oh yeah!
Since lunch was a three-course affair, I kept things on the light side for dinner with a bowl of mini chicken cilantro wontons (from Bibigo, another item from Costco we stock up on) and spinach in homemade chicken broth (using my recipe).
That’s all I’ve got – what’s the best thing you ate today? Mine is definitely the salmon. I rarely cook fish but I’ll definitely be incorporating salmon into my repertoire. If you’re a fan of salmon, share your favorite recipe in the comments!
