Packed with whole grains, lightly sweetened with honey and super moist, these healthy carrot cake muffins are a great breakfast option.

It’s that time of year when I want to bake all the time. After weeks of baking holiday cookies and pies though, I’m ready for some healthy recipes loaded with good for you ingredients. If you love classic carrot cake, you’ll love this these muffins. I mean, it’s like eating cake for breakfast, except they are also filling and nutritious!

These muffins are wonderful on their own. They are dense and hearty, yet moist and tender, which are also packed with wholesome ingredients like carrots, pecans, old fashioned oats, and whole wheat flour. That’s much appreciated for the New Year, after weeks of indulging in holiday foods. For just a touch of sweetness, I used Don Victor® Orange Blossom Comb Honey Globe Jar which is raw, filtered honey, not heated or processed in any other way.

The honeycomb that comes inside Don Victor® honey jar is perfectly edible and considered a gourmet delicacy by many. It’s amazing slathered on a toasted muffin with a pat of butter, or on hot biscuits, French toast, and pancakes. I also love to serve it on a cheese platter – savory cheese pairs so well with the floral, sweet honeycomb. I added pieces of honeycomb into the muffins for a little something special.

I devoured one of these muffins as an afternoon snack while typing this and it was so delicious – it would be perfect with a cup of coffee or tea!

Whole Wheat Carrot Cake Muffins

Packed with whole grains, lightly sweetened with honey and super moist, these healthy carrot cake muffins are a great breakfast option.

Ingredients

  • 2 cups whole wheat pastry flour
  • 1/2 cup old fashioned oats, pulsed until fine
  • 2 tsps baking powder
  • 1 tsp baking soda
  • 2 tsps ground cinnamon
  • 1 tsp ground nutmeg
  • ½ tsp salt
  • 2 eggs
  • ⅓ cup Don Victor® honey and honeycomb
  • ⅓ cup canola oil
  • 1⅓ cups buttermilk
  • 1 tsp vanilla extract
  • 1/2 cup toasted pecans, chopped
  • 1½ cups grated carrots

Instructions

  1. Preheat the oven to 375F. Spray muffin tins with cooking spray.
  2. In a mixing bowl, whisk together whole wheat flour, oats, baking powder, baking soda, spices and salt.
  3. In a separate bowl, beat together eggs, honey, oil, buttermilk and vanilla. Add the dry ingredients and mix until well combined. Fold in pecans and carrots.
  4. Spoon batter into muffin cups, filling them about 3/4 full. Add pieces of honeycomb into each muffin.
  5. Place in the oven, and bake 25 minutes until lightly browned and a toothpick inserted in the center comes out clean. Let cool completely before serving.
