What I Ate Wednesday

{WIAW#7} A Day of Snackin’

In case you’ve just tuned in, every Wednesday I share some of the foods I eat in a day. Thanks to Jenn at Peas and Crayon for hosting What I Ate Wednesday!

It’s Wednesday and we’re already halfway through the work week.  Not too shabby, huh?  Let’s take a look into what has been making their way onto my plate:

First thing first: breakfast (dessert for breakfast)!  I made a BIG portion of apple crisp with extra oatmeal topping for dessert last night so that I can have the leftover for breakfast with a scoop of 0% Fage Greek yogurt on top.  I enjoyed every bite of this!

Instead of a full lunch, I’ve got a mish mash of items to nosh on.

Some homemade goat cheese (James’ aunt and uncle made it!) with cracked wheat crackers.  These crackers got a great flavor and texture and are nice little dippers for my goat cheese.  Also, I may have been scooping the goat cheese with a spoon to savor by itself.  It is tangy, creamy, and just amazing!

Carrot chips on the side.  I brought carrot sticks to work last week and seriously felt awful chomping down on them. They are so crunchy!  These carrot chips are thinner and definitely do not make that audible snap when you bite into the sticks.  More discrete = more office-friendly.  Do you avoid certain foods because of the sound it makes when chewing it?  I love potato chips but I have never eaten them at work, which probably isn’t a bad thing! ;)

Rounding it all out we’ve got a bowl of fresh fruits.  That’s one chopped up navel orange and half of a mango.

At around 3pm, I snacked on another Kit’s Organic Fruit and Nut Bar from the seemingly bottomless box Clif Bar sent me to try, and this one is Peanut Butter flavor!  I have said it many times, but the short ingredient list is worth mentioning again.  Let’s see what ingredients are in this one.

Just FOUR!  It boggles my mind.

I have one more flavor to try, and once I finish it I will let you know what I think.

Dinner is certainly not winning any beauty pageants, but it’s delish, nonetheless!  I made a casserole of Scalloped Potatoes with Ham which I lightened up by using skim milk instead of all heavy cream.

In other news…

Good news:  This is the first time I tried making scalloped potatoes and it turned out so well!  Why haven’t I done this before?!

Bad news:  I didn’t put a baking sheet under the casserole dish (thought twice about doing that but still decided against it) and the sauce bubbling over the dish was enough to set the smoke detector off.  Guess the time-honored saying still rings true — you’d better be safe than sorry.  It took me a good minute or two to locate the detector in the apartment.

Good news:  I found the smoke detector and single-handedly deactivated it.  I’ll show ’em who’s boss!

So that pretty much sums up my day of eats!  Lots of tasty food to help fuel my body and keep me going strong.  With that said, I’m off to catch up on last week’s Top Chef episode before tonight’s.  Have a good night!
