{WIAW#6} Tastes Like Brownie

In case you’ve just tuned in, every Wednesday I share some of the foods I eat in a day. Thanks to Jenn at Peas and Crayon for hosting What I Ate Wednesday!

I blame it on the cold weather, but I have been waking up fifteen minutes early lately to slowly ease myself into the morning and get ready for work.  It takes a lot of determination to get myself out of the toasty warm bed these days!  Plus, it takes an extra five minutes for me to get bundled up into a human burrito and get out of the door.

And because it’s so darn cold outside, I warmed up with a cup of hot coffee this morning with my breakfast.  I haven’t been drinking too much coffee lately, so the strongest roast I can tolerate is a Starbucks medium.  This Guatemala Antigua medium roast tastes almost chocolatey, which went well with my Kit’s Organic Dark Chocolate and Almond Coconut bar.  Unlike the Lemon Chia Seeds flavor which is full of crunchy texture, this one tastes very rich and has a dense texture.  I seriously thought I was eating a brownie!

Add a sweet and crunchy Gala apple, which I prefer over Honeycrisp, aka the King of Apples.

I made this quick and satisfying sandwich for lunch.

Proscuitto, mozarella cheese, a smear each of Dijon mustard and basil pesto, all between two slices of multigrain sandwich bread.

With some pimento-stuffed green olives and cornichons on the side.

For dinner, I used the fresh rosemary I had left over from making Seared Rosemary Pork Chops to make this Roasted Chicken with Lemon, Garlic, and Rosemary, rounded out with roasted Yukon Gold and sweet potatoes on the side.  It’s a foolproof recipe (substituted fresh thyme with rosemary) and I guarantee your chicken will be moist, tender, and flavorful!

Well, it’s hump day – which means the week is half over!  I am going to blend a Carrot Orange Sunshine Smoothie to sip on while catching up on another episode of American Idol.  I am not too crazy about the contestants this season but I do like Keith Urban, so the jury’s still out on whether I am going to keep watching.  We shall see!
