Holiday Favorites, What I Ate Wednesday

{WIAW#3} Christmas Eve Edition

In case you’ve just tuned in, every Wednesday I share some of the foods I eat in a day. Thanks to Jenn at Peas and Crayon for hosting What I Ate Wednesday!

Greetings from Colorado!  Despite it being one of the busiest travel days of the year, James and I made it here in record time this afternoon, and without a single hiccup.  FYI – it has been raining for the entire day today and yesterday, so we were expecting a delay when we got to the airport.  But nope, it was smooth sailing from there and we even arrived 30 minutes early!

This morning I woke up per usual and almost forgot that I had taken the day off!  After trying hard (and failed) to go back to sleep, I hit the gym bright and early and pounded out 5.10 miles on the treadmill.  I’ve been stopping at 4.5 miles lately, so going the extra 0.6 miles made me feel accomplished.  Nothing like a little endorphin to keep you feeling refreshed and happy!

After my workout, I snacked on a Honeycrisp apple with almond butter while I finished packing my bag.  Honeycrisp apples have been popping up in restaurant menus lately and since my friend mentioned how special they are, I was determined to get some to try out.

Found them at Whole Foods.  And they’re not cheap either!

My thoughts?  Well, they are crisp and sweet for sure, but not as life-changing as they are known to be in my opinion.

I also packed some Mojo bars for us to snack on later on the plane.

James’ dad was kind enough to pick us up from Denver, and by the time we arrived at the house, James’ mom already had dinner laid out, featuring baked ham and sides!

And desserts (key lime pie and pecan pie) that we are too full for at the moment!  We’re relaxing by the fire for a bit before heading out for some drinks with friends later.
