Maple Pumpkin Pie Oatmeal

Maple Pumpkin Pie Oatmeal is a healthy and delicious breakfast that will warm you from inside out.

Remember I mentioned I didn’t get to see the tree at Rockefeller Center this last year?  Well, I know we were late to the game, but we stopped by to see it after the New Year.  Better late than never! ;)

Other than that, I spent the rest of the weekend relaxing to the fullest.  Flannel pants, fluffy slippers, movies, chips and dips, and beer were in the work.  Not the most productive way to get 2015 started, but definitely a much-needed low key one after the holidays and travelling.  I also started watching the second season of MasterChef Junior and must say that all these kids can definitely cook — it’s inspirational and shocking to see them so talented at such a young age!

I did manage to spend my day yesterday re-testing the Kitchenaid ice cream attachment (after failing miserably the first time around) I got for Christmas.  By the end of the day, I had a batch of creamy, freshly churned Butter Pecan Ice Cream in my freezer, waiting to be devoured!

Anyway, after a particularly indulgent past couple of days – i.e, cheese and ham flatbread pizza for breakfast and spicy buffalo wings for dinner – it feels good to get back on the bandwagon!  I started my morning with a healthy Maple Pumpkin Pie Oatmeal made quickly on the stovetop.  I imagine this will also work in the microwave, but I haven’t had much luck with it as the liquid overflows every time I try to use the microwave method.

This oatmeal is named “pumpkin pie”oatmeal because the creamy oats, mixed with pumpkin puree, maple syrup, and a dash of pumpkin pie spice, tasted JUST like pumpkin pie filling.

It is sweet, thick, and decadent.  I honestly can’t say enough good things about this bowl — I just wished I made a bigger bowl!

I am down to the very last sprinkle of my jar of pumpkin pie spice.  I love this stuff!  It really saves the hassle of having to dig through the spice cabinet for the individual jars of cinnamon, nutmeg, and clove.

Pumpkin Pie Oatmeal

Ingredients

  • 1/2 cup old-fashioned oats
  • 1/2 cup milk or 1 cup milk if not using water
  • 1/2 cup water
  • 1/4 C pumpkin puree
  • 1 tsp pure maple syrup or to taste
  • 1/4 tsp pumpkin pie spice
  • Pinch of salt
  • Optional toppings: toasted pumpkin seeds pecans

Instructions

  • Place oats, milk, and water in a small saucepan. Cook over medium high heat for about 5 minutes, or until the mixture gets thick and creamy, stirring constantly.
  • Mix in pumpkin puree, maple syrup, spice, and salt.
  • Add toppings if using, and serve hot.
