Start the day off right with homemade garden vegetable cream cheese spread!

You probably hear it all the time that it’s important to start the day off on the right foot with a nutritious breakfast.  Today we’re talking breakfast!  Breakfast can get pretty boring and repetitive if you don’t mix things up, so I’m sharing a tasty yet easy recipe that will get you excited to wake up in the morning and tackle the day.

Bagel with cream cheese is one of my favorite things to eat for breakfast, and in my opinion nothing beats a homemade cream cheese spread on a toasted bagel that is crunchy on the outside and chewy on the inside.  Better yet this version is loaded with garden vegetables.

I decided to go with a mix of fresh vegetables like carrots, yellow and red bell peppers.  Doesn’t it look so pretty with the different specks of colors?  I added some garlic powder and chopped chives for flavor too!

Now to build a better breakfast, I’ve also got the winning combination of Lender’s Bagels, 2% Great Value Milk and Del Monte Fruit & Veggie Fusions (with dozen varieties of fruits and combinations of fruits to choose from). All three are just great together because they give kids protein, carbohydrates, vitamin C and other things that they won’t get with other choices.

Like I mentioned I’m a big fan of bagels for breakfast (quick afternoon snacks too) because it’s timesaving, easy, tasty and nutritious, and Lender’s has a bagel for everyone! Plain, blueberry and cinnamon-raisin flavors are kid-friendly and great for the whole family, and you can find them in the refrigerated dairy section of Walmart along with other breakfast items.

By the way, you can whip up this cream cheese spread the night before and remove everything from the refrigerator right before you serve breakfast. Done and done!

Garden Vegetable Cream Cheese Spread

Start the day off right with homemade garden vegetable cream cheese spread!
Servings 1 1/2 cups

Ingredients

  • 16 oz cream cheese softened
  • 1/2 cup red bell pepper finely diced
  • 1/2 cup yellow bell pepper finely diced
  • 1 small carrot peeled and finely diced
  • 1/2 tsp garlic powder
  • 1/4 cup chopped chives
  • Salt to taste

Instructions

  • In a large mixing bowl, combine cream cheese with bell peppers, carrots, garlic powder, and chopped chives. Season with salt and pepper to taste.
  • Serve on toasted bagel halves.

Notes

*Cream cheese spread lasts up to 1 week in the refrigerator stored in an airtight container.
