Buffalo Chicken Flatbread Pizza

IMG_1044t Have you been following the NCAA March Madness?  I haven’t been paying too much attention to the tournament this year to know which teams are promising or not, but I’m hoping to make it back in time for the championship game.  I’ll be leaving tonight for a two-week long vacation in Hong Kong (my sister’s wedding part two) and Beijing, but I certainly won’t leave you guys hanging!  I have my posts scheduled for when I’m gone, and I hope to be able to check in here occasionally with travel tidbits.

Anyway, whether or not you root for a college basketball team or have a winning bracket, the eating is at least as important to the game watching in my opinion!  Even if your team doesn’t win the championship, you can be sure that your menu lineup is a winner.  In addition to the usual suspects – guacamole, dips, and chips – this snack combines two game day crowd-pleasers: buffalo chicken and pizza. IMG_1020 Boneless chicken breast is tossed in homemade buffalo sauce, piled on a precooked flatbread, and topped off with cheddar cheese and creamy blue cheese dressing.  Pop them in the oven just before game time and they’ll be ready to serve just in time for tip-off.  It’s so quick and easy to make, you’ll want to go for a second round during halftime. IMG_1016 Whether or not you’re watching the games, you probably don’t need another excuse to try this finger-licking good recipe!

Buffalo Chicken Flatbread Pizza

Ingredients

  • 1 tbsp butter
  • ¼ cup hot sauce
  • 1 tsp granulated sugar
  • 1 large boneless skinless chicken breasts, cooked and shredded
  • ¼ cup blue cheese crumbled
  • ¾ cup buttermilk
  • ¼ cup sour cream
  • Salt and pepper to taste
  • 4 small flatbreads
  • ½ cup cheddar cheese shredded
  • Fresh parsley for garnish (optional)

Instructions

  • Preheat oven to 400F.
  • To make the buffalo sauce, melt butter in a saucepan over medium heat. Stir in hot sauce and sugar. Add the chicken pieces and toss to coat with the sauce. Set aside.
  • To make the blue cheese dressing, mash blue cheese and buttermilk together with a fork until mixture is coarsely blended. Stir in sour cream and season to taste with salt and pepper.
  • To assemble the flatbreads, spread about 2 tablespoons of blue cheese dressing over each of the flatbreads and bake for 5 minutes.
  • Top with buffalo chicken pieces, cheddar cheese, and additional blue cheese dressing and return flatbreads to the oven. Bake until the crust is crispy and the toppings are warmed through.

Notes

*I used Greek flatbreads but you can also use naan, Middle Eastern flatbreads, or pita.
