Bruschetta White Bean Dip

Get ready for game day with this fresh, delicious Bruschetta White Bean Dip!

The big game is only a couple of days away and in order to prepare for game day, I’m making a touchdown with all the delicious food and drinks to serve my family and friends.  Since we’re about a month into the New Year, a lot of us are making strides to get healthier and trying to stick to our resolutions.  Instead of loading up on nachos, pizza, and wings I have been trying to lighten up some of our favorite snacks, like this fresh, delicious Bruschetta White Bean Dip!

This dip is light, fresh, and perfect for game day snacking, yet it won’t hurt all those health conscious goals you’ve made.

I let the food processor do all the work until the mixture gets nice and creamy, then top with fresh cherry tomatoes that have been tossed with basil, olive oil, balsamic vinegar, and garlic. Of course you can get creative and add different bruschetta toppings like olives and mozzarella.

Bruschetta White Bean Dip

Get ready for game day with this fresh, delicious Bruschetta White Bean Dip!

Ingredients

For the white bean dip:

  • 1 15 oz can cannellini beans drained and rinsed
  • 1/2 tsp finely chopped fresh rosemary
  • 1 tbsp fresh lemon juice
  • 2 tbsps olive oil
  • Water more if needed
  • Salt and pepper to taste

For the bruschetta topping:

  • 1 tbsp balsamic vinegar
  • 2 tbsps olive oil
  • 1/2 pint cherry tomatoes halved
  • 4 basil leaves cut into chiffonade
  • 1 clove garlic minced
  • Salt and pepper to taste
  • RITZ Crackers for serving

Instructions

  • To make the dip, combine cannellini beans, rosemary, lemon juice, olive oil in a food processor and puree until smooth, adding more water if necessary to achieve desired consistency. Season with salt and pepper to taste.
  • To make the bruschetta topping, whisk together balsamic vinegar and olive oil in a bowl. Add cherry tomatoes, basil leaves, and garlic and toss to combine. Season with salt and pepper to taste.
  • To serve, transfer white bean dip to a serving bowl and top with bruschetta mixture. Drizzle with a little olive oil if desired and serve at room temperature with RITZ crackers.

I love appetizers like that this that are low preparation, because then I can enjoy the company and not spend the entire day in the kitchen.  That’s a game day win, isn’t it?

I served this fresh and delicious dip with RITZ Crackers and Coke Zero, both of which can be found at Walmart.  The flaky and buttery crackers pair so well with the creamy dip and fresh bruschetta toppings – you’re sure to be the hostess with the mostest!
