Pesto and Ricotta Eggs with Ham

Ingredients

  • 2 eggs I used 1 whole egg and two egg whites
  • 1 tbsp ricotta cheese
  • 1 tsp basil pesto
  • Salt and pepper to taste
  • 2 slices proscuitto or ham
  • 1 slice bread toasted
  • Cooking spray

Instructions

  • In a small bowl, whisk together eggs, ricotta cheese, pesto, salt, and pepper. Cook eggs in a nonstick skillet coated with cooking spray over low heat, stirring constantly until desired doneness.
  • Remove from heat, and serve over ham and toasted bread.
