Caribbean Jerk Turkey Burgers with Mango Salsa

Ingredients

For the mango salsa:

  • 1 fresh mango peeled, seeded, and diced
  • 2 plum tomatoes seeded and diced
  • ¼ cup red onion diced
  • 1 jalapeno pepper seeded, finely chopped
  • ¼ cup fresh cilantro leaves finely chopped
  • 1 lime juiced
  • Salt and pepper to taste

For the burgers:

  • 1 lb lean ground turkey
  • ¼ cup panko Japanese breadcrumbs
  • 1 small shallot finely chopped
  • 1 tbsp fresh lime juice
  • 1 tsp dried thyme
  • ½ tsp ground allspice
  • ¼ tsp ground cinnamon
  • ¼ tsp cayenne pepper
  • 1 tsp salt
  • ½ tsp black pepper
  • Canola oil for cooking
  • 4 hamburger buns for serving

Instructions

  • In a large bowl, combine all salsa ingredients and season with salt and pepper to taste. Set aside
  • Meanwhile, combine all burger ingredients (except for the last two) in another large bowl and mix until well blended.
  • Form into four 1-inch patties and cook on a grill or non-stick skillet coated with canola oil over medium heat for 4 to 5 minutes per side, or until well done.
  • Serve on toasted buns with mango salsa. Enjoy!

Notes

*Be sure not to overwork the meat mixture, otherwise the burgers will turn out tough.
