Ingredients
1/2tbspolive oil
1tbspunsalted butter
2large shallotsdiced
2clovesgarlicminced
1lbfresh button mushroomswhite or cremini, wiped clean
½tspdried thyme
Salt and pepperto taste
Fresh parsleyfor garnish (optional)
Instructions
Heat olive oil and butter in a large skillet over medium high heat. Add shallots and cook over medium heat for 3 minutes, or until the shallots are translucent.
Add garlic to the skillet and cook until fragrant, about 30 seconds.
Add mushrooms and thyme and cook until the mushrooms are tender and begin to release their juices, about 5 minutes.
Season with salt and pepper to taste, and garnish with fresh parsley if desired. Serve immediately.
