Summer Corn Salad

Ingredients

  • 3 tbsps olive oil
  • 2 tbsps fresh lime juice
  • Salt and pepper to taste
  • 2 cups corn kernels or 3 ears corn boiled or grilled
  • 3 plum tomatoes seeded and diced
  • 2 scallions finely chopped
  • 1 small red onion diced
  • Chopped parsley for garnish

Instructions

  • In a large bowl, whisk together olive oil and fresh lime juice. Season with salt and pepper to taste.
  • Add remaining ingredients to the bowl and toss until well combined. Let sit for at least 30 minutes. Serve cold or at room temperature.
