Crispy quesadillas filled with spicy, smoky chipotle shrimp, roasted sweet peppers, and melted cheese!

Ingredients
12ozcooked shrimpdiced
1/2cuproasted red peppersdiced
2chipotle peppersin adobo sauce, minced
Salt and pepperto taste
4 10β flour or whole wheat tortillas
1β cupsshredded Mexican cheese blendor a mix of sharp cheddar and pepper jack cheese
Optional garnish: lime wedgeschopped cilantro
Instructions
In a medium bowl, combine shrimp, roasted red peppers, chipotle peppers, salt and pepper, and mix well.
In a non-stick skillet coated with cooking spray, heat tortilla over medium heat. Place ΒΌ of the shrimp mixture on one half of tortilla, top with β cup cheddar cheese, and fold tortilla over.
Cook for 1 to 2 minutes until tortilla turns golden brown; flip and cook the other side until browned and cheese is melted.
Repeat with remaining ingredients. Cut into wedges and serve warm.
