Asparagus Gruyere Frittata

Ingredients

  • 1 tbsp olive oil
  • 1 onion chopped
  • 8 oz asparagus tough ends trimmed off, cut into 1-inch pieces
  • 6 large eggs
  • 1/4 cup heavy cream
  • 1 cup Gruyere cheese shredded, divided
  • 1/2 tsp salt
  • 1/4 freshly ground black pepper

Instructions

  • Preheat oven to 350F.
  • Heat oil in an 8-inch ovenproof pan. Saute onions until soft and translucent, about 5 minutes. Add asparagus and cook for an additional 5 minutes.
  • In a mixing bowl, whisk together eggs, cream, 3/4 cup of cheese, salt, and pepper. Pour the mixture into the pan.
  • Sprinkle remaining 1/4 cup of cheese on top and bake frittata for 30-35 minutes until the eggs are set. Cut into wedges and serve.
