Fresh tomatoes, basil, and mozzarella cheese come together with chicken sausage in a pasta dish that is ready in under 30 minutes -- perfect for busy weeknights!

Ingredients
1lbrotinipenne, or any medium cut pasta
12ozal fresco Sundried Tomato Chicken Sausage
2tbspsolive oil
3clovesgarlicminced
2pintsgrape tomatoes
Salt and pepperto taste
8ozfresh mozzarella cheesediced
1/2cupfresh basilchopped
Instructions
Cook pasta according to package directions until al dente. Drain and set aside.
Heat olive oil in a large skillet over medium heat and cook sausages until browned on both sides. Let cool slightly and cut into slices.
Add garlic to skillet and saute until fragrant, about 30 seconds. Add tomatoes and cook, stirring occasionally, until tomatoes burst and release their juices and form a sauce, about 10 minutes. Season with salt and pepper to taste.
Add cooked pasta and sausages back into the skillet and toss until heated through. Stir in mozzarella and basil and serve immediately.
