Ingredients
2jalapenoshalved and seeded
1 1/2cupsfresh cilantro
3clovesgarlicsmashed
2tbspsfreshly squeezed lime juice
1/2cupolive oil
Salt and pepperto taste
1lbpork tenderloincut into 1-inch chunks
1bell pepperdiced
3cupspineapple chunks
1red oniondiced
Metal or wooden skewers
Vegetable oilfor cooking
Instructions
Combine jalapenos, cilantro, garlic, lime juice, and olive oil in the bowl of a food processor or blender. Blend until well combined, adding water if necessary to achieve desired consistency. Season with salt and pepper to taste.
Preheat grill to medium-high heat. Thread kebabs alternately with the pork, peppers, pineapple, and onions. Brush each kebab lightly with oil, season the pork with salt and pepper on both sides, and grill for about 5 minutes per side, turning once, or until the pork is completely cooked through.
Remove kebabs from grill and serve immediately with cilantro jalapeno sauce.
