Cheesy Turkey Noodle Casserole

This Cheesy Turkey Noodle Casserole is creamy and hearty with a crunchy, buttery cracker topping!

Ingredients

  • 2 tbsps olive oil
  • 1 large onion diced
  • 2 medium carrots peeled and diced
  • 2 cloves garlic minced
  • 1 tsp fresh thyme chopped
  • 2 ½ cups chicken stock or broth
  • 10 oz rotini pasta
  • 2 cups broccoli florets
  • 8 oz shredded cheddar
  • 1 cup milk
  • 2 cups diced turkey breast
  • 1 tbsp unsalted butter melted
  • 1/2 cup saltine crackers crushed

Instructions

  • Preheat oven to 350F. Coat a 9x13 casserole or oven-safe dish with cooking spray.
  • Heat oil in a large saute pan on medium high heat. Add onions, carrots, garlic, and thyme, then saute until softened. Season with salt and pepper to taste.
  • Add broth and bring to a boil. Stir in the pasta. Cover the pan and simmer for 8 minutes, adding the broccoli florets in the last 3 minutes.
  • Stir in cheddar, milk, and turkey breast and simmer for 2 minutes.
  • Transfer to the prepared casserole. Combine melted butter and saltine crackers in a small bowl and add evenly on the top of casserole. Bake for 30 minutes until the noodles are bubbly and the topping is golden brown. Serve warm.
