This Cheesy Turkey Noodle Casserole is creamy and hearty with a crunchy, buttery cracker topping!

Ingredients
2tbspsolive oil
1large oniondiced
2medium carrotspeeled and diced
2clovesgarlicminced
1tspfresh thymechopped
2 ½cupschicken stock or broth
10ozrotini pasta
2cupsbroccoli florets
8ozshredded cheddar
1cupmilk
2cupsdiced turkey breast
1tbspunsalted buttermelted
1/2cupsaltine crackerscrushed
Instructions
Preheat oven to 350F. Coat a 9x13 casserole or oven-safe dish with cooking spray.
Heat oil in a large saute pan on medium high heat. Add onions, carrots, garlic, and thyme, then saute until softened. Season with salt and pepper to taste.
Add broth and bring to a boil. Stir in the pasta. Cover the pan and simmer for 8 minutes, adding the broccoli florets in the last 3 minutes.
Stir in cheddar, milk, and turkey breast and simmer for 2 minutes.
Transfer to the prepared casserole. Combine melted butter and saltine crackers in a small bowl and add evenly on the top of casserole. Bake for 30 minutes until the noodles are bubbly and the topping is golden brown. Serve warm.
