Spicy Sesame Carrot Zucchini Noodles

Light and refreshing carrot and zucchini noodles with sweet and savory flavors, plus a touch of heat!

Ingredients

  • 1 1/2 tbsps reduced sodium soy sauce
  • 1 tbsp tahini
  • 1 tsp sesame oil
  • 1 tsp rice wine vinegar
  • 1 tsp honey
  • 1 clove garlic minced
  • ½ tsp sriracha more or less to taste
  • 6 oz Green Giant Veggie Spirals™ Carrot
  • 6 oz Green Giant Veggie Spirals™ Zucchini
  • 1/2 cup cooked edamame
  • 1 tsp sesame seeds toasted
  • 1/4 cup chopped peanuts
  • 1/2 cup chopped cilantro

Instructions

  • In a large bowl, whisk together soy sauce, tahini, sesame oil, rice wine vinegar, honey, garlic, and sriracha.
  • Cook Green Giant Veggie Spirals™ Carrots and Zucchini according to the package directions. Drain well. Add veggie noodles and edamame to the bowl, and toss to combine with dressing.
  • Garnish with sesame seeds, peanuts, and cilantro. Serve at room temperature or chilled.
