This Gluten-Free Banana Bread has to be one of my favorite gluten-free baking recipes of all time! It's a good way to use up ripe bananas, and the recipe is something you can feel good about making and sharing.

Ingredients
3ripe bananasmashed
1/3cupunsalted buttermelted
2large eggsroom temperature
2tbspsmilk
1tspvanilla extract
1 1/2cupsgluten-free flour
3/4cupbrown sugar
1tspbaking soda
1/4tspxanthan gumleave out if your flour already has it
1/4tspsalt
1/2tspground cinnamon
Instructions
Preheat the oven to 350°F. Coat a 8 x 4 loaf pan with cooking spray.
In a mixing bowl, mix together mashed bananas, melted butter, eggs, milk, and vanilla. In a separate bowl combine flour, brown sugar, baking soda, xanthan gum (if using), salt, and cinnamon.
Add the flour mixture to the wet mixture and stir until combined.
Pour into the greased loaf pan. Bake for 50 minutes to 1 hour, or until a toothpick inserted in the center comes out clean.
