Gluten-Free Banana Bread

This Gluten-Free Banana Bread has to be one of my favorite gluten-free baking recipes of all time! It's a good way to use up ripe bananas, and the recipe is something you can feel good about making and sharing.

Ingredients

  • 3 ripe bananas mashed
  • 1/3 cup unsalted butter melted
  • 2 large eggs room temperature
  • 2 tbsps milk
  • 1 tsp vanilla extract
  • 1 1/2 cups gluten-free flour
  • 3/4 cup brown sugar
  • 1 tsp baking soda
  • 1/4 tsp xanthan gum leave out if your flour already has it
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon

Instructions

  • Preheat the oven to 350°F. Coat a 8 x 4 loaf pan with cooking spray.
  • In a mixing bowl, mix together mashed bananas, melted butter, eggs, milk, and vanilla. In a separate bowl combine flour, brown sugar, baking soda, xanthan gum (if using), salt, and cinnamon.
  • Add the flour mixture to the wet mixture and stir until combined.
  • Pour into the greased loaf pan. Bake for 50 minutes to 1 hour, or until a toothpick inserted in the center comes out clean.
  • Remove from pan and allow to cool completely.
