Blueberry Buttermilk Waffles

Crispy, buttery, and fluffy buttermilk waffles filled with sweet blueberries are the best way to start the day!

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 2 cups buttermilk
  • 2 large eggs room temperature
  • 1/2 cup unsalted butter melted
  • 1 tsp vanilla extract
  • 2 cups fresh blueberries

Instructions

  • Whisk together the flour, baking powder, salt, and sugar in a large mixing bowl.
  • Whisk together the buttermilk, eggs, melted butter, and vanilla extract in another bowl, and stir into the dry ingredients until well combined. Gently fold in blueberries.
  • Coat the waffle iron with nonstick spray. Pour about 1/2 cup of the waffle batter into the waffle iron (more or less depending on the size of your waffle iron) and cook until the waffles are golden brown and crisp.
  • Serve warm.
