Turkey Avocado Grilled Cheese

You know those food cravings?  Sometimes they’re a signal that the body is missing a key nutrient, but other times…well, let’s just say that there’s no nutritionally justifiable reason for craving ice cream pie with Oreo cookie crust every night (yeah I made one last week…), you know what I mean?

On a healthier note, I have been craving AVOCADOS lately, and if there’s an Avocado Diet, I would be the first to sign up for it!  By the way, check out this guide on picking avocados that are just ripe instead of too ripe — works for me every time.  If you see that person discreetly popping stems off avocados at the grocery store, well, hi, that’s me over there!

I make guacamole all the time — with and without kale or Greek yogurt — but I took some time today to whip up this mouthwatering Turkey Avocado Grilled Cheese for lunch.

Decadent and drool-worthy, this sandwich is definitely a splurge, but super good for the soul.  I just love the combination of turkey and creamy avocado, and the melted spicy pepper jack that “glued” everything together just took it over the top!  It’s always the simple things, no?

The best part? I had the rest of the ingredients I needed already on hand.  My mom needed to empty her pantry and fridge of perishable food items before she left town, so I selflessly stepped up to the plate and took a 2 pound roasted turkey breast off her hands. ;)

This sandwich is the ultimate grilled cheese, and it’s a cinch to whip up.  Hope you give it a try!

Turkey Avocado Grilled Cheese Sandwich

Ingredients

  • 4 slices whole wheat or multigrain bread
  • 6 oz deli turkey breast sliced
  • 1 ripe Hass avocados sliced
  • 4 oz pepper jack cheese sliced
  • 1 tbsp unsalted butter softened

Instructions

  • Assemble the sandwich by layering turkey, avocado, and cheese between two slices of bread.
  • Brush the outsides of the two slices of bread with butter.
  • On a hot griddle or panini press, grill sandwiches for 2 to 3 minutes on each side or until bread is golden brown and cheese is melted.
  • Serve hot.
