Nectarine Overnight Oats Smoothie

Meatless Monday is here again with an easy and delicious smoothie that is perfect for that Monday morning back-to-work frenzy. Or really, any day of the week when you need a nourishing grab-and-go breakfast.

Kelly and I went hiking with our friends in Breakneck Ridge this past weekend and we were in some hardcore hiking mode. The uphill climb was steep and strenuous, with lots of rock scrambling (on our hands and knees!), but we were rewarded with some amazing views of the Hudson Valley.

CollageTo help fuel our energy for the hike, I made us these overnight oats smoothie. Last week, I told you guys that I jumped on the green smoothie bandwagon, and this week, I jumped on yet another one with these overnight oats that appeared all over Pinterest. Basically, the idea is to let old-fashioned rolled oats soak overnight in yogurt, or milk, or a mixture of both so that they soften up. With that said, I borrowed the idea and used the overnight oats in a sippable concoction.

I tried adding oats to my smoothies, but the resulting texture was too grainy for my taste. The overnight oats, on the other hand, blend up very nicely. It even helps thicken up the smoothie! By the way, if you prefer your smoothies icy cold, you can add some ice cubes, or better yet, frozen banana slices. Whenever I have extra bananas on hand – especially ones that are turning brown faster than I can eat – I’ll slice them up and keep them frozen in ziplock bags until ready for use.

With fruits, oats, and yogurt all in one cup, this smoothie is like a fruit and yogurt parfait blended up. It’s packed with nutrition and is the perfect drink to get your day off to a healthy start. I’ve been sipping on these for the past few days, and I love the fact that I get to eat my breakfast as I’m walking to work in the morning #chronicsnoozer #morningsontherun. If somebody made me a glass of this every morning, I’d be a pretty happy lady!

Meatless Monday: Nectarine Overnight Oats Smoothie

Ingredients

  • ¼ cup old-fashioned rolled oats
  • ¼ cup plain low-fat yogurt
  • 2 nectarines coarsely chopped
  • 1 banana sliced
  • ½ cup fat-free milk
  • Honey to taste (optional)

Instructions

  • In a small jar, combine oats and yogurt, and then let the mixture sit overnight in the refrigerator.
  • In a blender, combine overnight oats, nectarines, banana, milk, and honey. Puree until smooth. Serve immediately.

Notes

*Add more milk, fruit juice, or water if you prefer a thinner consistency
