Start you morning off with a Carrot Orange Sunshine Smoothie loaded with good-for-you carrots, orange, mango, and ginger.

Happy Monday, everyone!  Did you enjoy an extra hour of sleep this weekend?  James had to work overnight from Saturday into Sunday, so as the clock turned back an hour, he actually had to work an extra hour while I slept like a baby.  Hey, life is unfair :-P

In other news, Williams-Sonoma challenged me to create a smoothie for Smoothie Week with an unusual ingredient.  Few months ago, I tried my first Green Smoothie with kale, pineapple, mango, and coconut.  That green color might not be for everyone.  Well how about this attractive orange, vitamin-rich smoothie?  I was in the grocery store last week when I spotted bottles of carrot juice right next to the orange juice cartons.  I never paid much attention to them, but then I thought it might be a good idea to put it in smoothies.

You add carrots to your salads, but in smoothies…why not?

Carrots are rich in beta carotene, vitamins, and minerals.  Check out the nutrition facts — 750% of your daily needs for Vitamin A per cup of carrot juice!  Not to mention there are ample amounts of iron and calcium too.

Throw in some orange juice, mango, and ginger, and you have a powerhouse of a smoothie.  It comes together in minutes, so you can make a drink, sip on it while you get ready in the morning or transfer to an insulated beverage container and take it to go.

A good blender is a must for making smoothies, soups, pestos, and frozen drinks.  With a blender like Vitamix or Breville, you can definitely throw in some baby carrots.  The more fiber, the better!

Meatless Monday: Carrot Orange Sunshine Smoothie

Start you morning off with a Carrot Orange Sunshine Smoothie loaded with good-for-you carrots, orange, mango, and ginger.
Servings 2

Ingredients

  • ½ cup orange juice
  • ½ cup carrot juice
  • ½ cup nonfat yogurt
  • ½ tsp fresh ginger grated
  • 1 cup frozen mango chunks
  • 1 tbsp honey

Instructions

  • Place all ingredients into a blender and blend until smooth. Add up to ¼ cup more carrot juice as needed to reach the desired consistency. Serve immediately.
